This food science experiment seemed to work out ok for feeding two people:
- One medium Tomato, seeded and diced
- Three baby bell peppers, seeded and quartered length-wise
- 1/4 of a medium red onion, coarsely chopped
- 1/2 of an English Cucumber chopped
- 1/4 cup Kalamata olives
- One head romaine Lettuce, chopped
- 1/4 cup Feta (optional if cutting dairy)
- 2 Tbsp Extra Vigin Olive Oil
- 1 Tbsp Balsamic vinegar
Combine first five ingredients with oil and vinegar. Add lettuce and toss until coated/mixed. Top with olives and feta. Enjoy!
I made this along with grilling kabobs, acorn squash, asparagus and some pineapple for dinner.
